Beef is sold as 1/8, 1/4, 1/2 or whole steers. All bulk beef is priced per pound carcass weight. Some of this weight will be lost in bone and trimmings during processing. Bulk orders can be picked up at our store, our drop-off point in Chicago, or shipped straight to your door. We also offer individual retail cuts available at our store or delivered to our drop off location every Wednesday. Bulk beef can be cut into a combination of the following cuts:
